Cooking lecho for winter with tomato paste does not require special knowledge, skills or exceptional culinary talents. Such a preparation is quite capable of young and inexperienced housewives. The main thing is to strictly follow the recipe, observe the cooking technology and know a few small but very important secrets.

Let's start with the ingredients:

- Bulgarian pepper — 3 kilograms. Pepper can be anything: red and fleshy or green and thin-walled. The vegetables that will get into the lecho can represent a multicolored and assorted pepper assortment.

Important: pepper should be sweet, not bitter;

- granulated sugar — 150 grams. For piquancy, 1 tablespoon of sugar can be replaced with 1 tablespoon of fragrant honey;

- salt — 1 tablespoon. For preservation, only ordinary coarse or medium-ground table salt is used.

Important: iodized and sea salt are not used in conservation;

- vegetable oil (sunflower) — 150 milliliters;

- vinegar (9%) — 100 milliliters;

- tomato paste — 0.5 liters;

- water — 0.5 liters;

- aromatic herbs: parsley, basil, coriander, marjoram, thyme.

Important: for preservation at home, it is better to use dried herbs.

How to cook lecho with tomato paste:

1. Bulgarian pepper should be washed, lightly dried, peeled from stalks and seeds, cut into medium slices.

2. In a large saucepan, mix water and tomato sauce (water and sauce can be replaced with 1 liter of tomato juice). Add sugar and vegetable oil. Put the pan on medium heat. Bring the mixture to a boil with constant stirring.

Important: thick—walled cast-iron cookware is an ideal option for cooking lecho.

3. Add pepper and salt to the boiling tomato sauce, add herbs if desired. Bring to a boil. Simmer for about 15-20 minutes. The pepper should be a little harsh, which will allow it to reach the desired condition during the cooling process.

Important: stew the vegetables under the lid to preserve the juiciness of the dish.

4. A few minutes before the end of stewing, add the vinegar and mix the pepper thoroughly.

5. Put the lecho in sterilized jars, cover with lids. Cool it down.

How to prepare cans for preservation

Cans for preservation should be free of defects and with smooth edges. Before sterilization, they should be thoroughly washed with a washcloth with soda or soap solution.

There are several ways to sterilize cans at home:

- sterilization in a microwave oven. Pour water (about 2 cm) on the bottom of clean jars. We put the jars in the oven. The microwave operating mode is started at a set power of 800 watts. The jars are sterilized during the boiling of the water. This method of sterilization is suitable for cans of small volumes.

- steam sterilization. A pan of boiling water is used as a sterilizer, on which an iron sieve is installed. A jar is placed on the sieve (neck down). The processing time of the cans is: 10 minutes — for liter, 15 — for three-liter. A steamer can also perform the role of a steam sterilizer.

- sterilization in the oven. The jars are installed on the grill of a cold oven with the neck down. The oven, together with the jars, warms up to a temperature of 150 ° C. This temperature is maintained for 15 minutes.

The lids are also sterilized. They are boiled in boiling water for 2-3 minutes.
